CALABASH FISH BASKET
Today we are heading to North Carolina Potato Festival to take a look at a local favourite that was on sale at this festival and cooked in a very unique way.
Flounders Food Stand cooks fish in an unique way – they use the calabash style. This is a very traditional style of cooking on the fishing docks where local fish are caught and cooked quickly.
In this dish flounder is used as it is a local delicacy and it is also a favourite from the members of the public. It is dipped in milk then it is put in flour – this is to make sure that it keeps moist. It is then put into more flour and a cornmeal mix. It is then deep fried for two to three minutes.
The fish that is cooked quickly is a favourite of locals from the area and it is a real delicacy.
