HOT BROWN PIZZA

Today we are heading to the Louisville Kentucky Derby festival to take a look at a really unique take on a classic dish from the area.

The Hot Brown sandwich was created in 1976 in the Kentucky Hotel. The original was an open sandwich with turkey and bacon covered in mornay sauce and then topped with fresh tomatoes.

The Pizza Dia Mobile Wood Fired Pizza van has taken this traditional favourite and transformed it into something brand new – a pizza.

The pizza is created with a yeast raised dough that uses 00 flour. When the pizza is shaped it is then covered in cornmeal.

The pizza base is then topped with Mornay sauce – which is a white sauce made with milk, butter, flour, seasoning and three types of cheese including parmesan. It is then topped with basil leaves, smoked BBQ turkey breast, smoked bacon, cheese and fresh sliced tomatoes.

The pizza is then put in the wood fire oven at 800 degrees which is using black ash and wood oak chip. When it is cooked, fresh parmesan is put on top to finish the experience.

The reviews are really positive stating it is tasty and crusty and it all works so well together as it is rich and gooey.
