Today we delve into a speciality that has come from Boise in Idaho and is available in locations such as the Westside Drive In. When I first saw photos of this dessert my mouth fell open in horror at this absurd idea for a pudding. However, when I read more into what it actually is, my perceptions completely changed and I actually found it highly creative.

The Ice Cream Potato is a summer tradition in Boise when there is hot weather and it is actually made up of ice cream. The vanilla ice cream is shaped into the shape of a baked potato then coated in cocoa powder to create the brown texture of the skin.

Once the ice cream is shaped, it is then cut down the middle and loaded with lots of other sweet treats such as whipped cream, chocolate shavings and chocolate syrup. In some shops they swap out the chocolate syrup for yellow frosting (‘butter’) and green sprinkles (‘chives’)
